There are 2 camps when it comes to Peeps, those who love them and those who can’t stand them. I happen to love them. Marshmallows and sugar shaped into cute little characters. What’s not to love? Whether or not you like the taste, I think we can all agree that this classic treat is a staple around Easter.

I used a bunny shaped Peep as inspiration for this Easter drink. These come in a few colors like yellow and purple, but I chose pink to compliment a strawberry drink. When making a festive cocktail there’s no need to reinvent the wheel. I took a classic cocktail, the mudslide, and made a few tweaks to make it pink!
Strawberry Mudslide
A mudslide is made with equal parts vodka, Kahlua, Bailey’s Irish Cream and heavy cream. These are all shaken together with ice then strained into a glass. The taste has hints of coffee and it is definitely an indulgent drink. I altered the classic recipe slightly by substituting Baileys Strawberries and Cream for the traditional flavor. This brings out a subtle pink color and adds a hint of strawberry flavor to the drink.

Peeps Cocktail
To turn a mudslide into a fun pink drink for Easter I focused on the presentation. The strawberries and cream liquor already gives the drink a lovely Spring color, I chose to dress up the glass for a fun Easter theme. First dip the rim of a cocktail glass into simple syrup then dip it into fine pink sugar. Be sure to do this before adding the drink!

Shake the mudslide in an ice filled shaker and strain into the glass. Use a scissors to cut a slit in the bottom of a bunny shaped Peep and slip it onto the side of the glass as a garnish. Voila! A festive pink cocktail for Easter.

Drink Variations
Make this drink non-alcoholic so your whole group can enjoy it. Frist rim a glass with simple syrup and pink sugar. In a blender mix vanilla ice cream, frozen strawberries and milk and serve it up in these festive glasses. Almost everyone can enjoy a strawberry shake!
To make a lighter version of the mudslide, use milk instead of heavy cream. You will still get the rich creamy taste, but with far less calories!
